INTRODUCTION
The exact history of zucchini bread
is not known but the introduction of quick rise breads was some time during the
18th century. There are two
ways to make bread rise: yeast or the correct combination of baking powder and
baking soda. Both of these agents react
with the proteins in the flour and create carbon dioxide, causing the bread to
rise.
