PESTO SAUCE


1.     INTRODUCTION

The ancient Romans ate a paste called moretum, which was made by crushing cheese, garlic and herbs together.  Basil, the main ingredient of modern pesto, likely originated in India and was first domesticated there.  Pesto is a sauce originating in Genoa in the Liguria region of northern Italy and traditionally consists of crushed garlic, basil, and European pine nuts blended with olive oil, Parmigiano Reggiano, and Fiore Sardo.

2.     MATERIALS AND METHODS

Materials:
·       3 cups fresh basil leaves
·       1 1/2 cups chopped walnuts
·       4 cloves garlic, peeled
·       1/4 cup grated Parmesan cheese
·       1 cup olive oil
·       Salt and pepper to taste 

Equipment:  
·      Food processer
·      Bowl

Preparation:
1.     In a food processor, blend together basil leaves, nuts, garlic, and cheese. Pour in oil slowly while still mixing. Stir in salt and pepper.

The recipe went very well.
